Cozy, Comfy Fall Recipes! Who doesn’t love them? In our house, September kicks off Fall. Once the weather gets crisp, there is nothing better than a nice, comfy meal. We wanted to share with you a couple of our favorite recipes!
When it’s really cold, especially if it’s rainy and kind of dreary out and it’s getting darker early we love to have a really cozy meal. To us a cozy meal is baking muffins, cooking soup and the smells just go through the home and there’s just something warm and comforting about it
In our house, we all really love cheese. In fact when my older kids were younger I would let them buy a block of cheese if they did really well all week with their schoolwork. I homeschooled so that block of cheese always got incorporated into our education. This recipe for cheese soup is absolutely delicious. It’s quite easy to make and can be used also to put on top of vegetables or to be used as a dip if you would rather that then as a soup, I love serving it in a bowl with croutons in it, the croutons just add a little bit of crispness to it.
Creamy Cheese Soup
2 T. butter
1 medium red onion, chopped fine
2 T. flour
1 cup chicken bouillon
3/4 cup milk
1/4 cup cream
shredded cheese, the amount depends of the cheese.
½ t. ground pepper
1/4 t garlic salt
Melt the butter in pan. Sauté onion for five minutes until soft. Stir occasionally. Mix flour into butter, and then pour the bouillon into the flour mixture slowly.
Stir constantly until soup thickens. Pour in all the milk and cream and bring to a boil continuing to stir. Return to stove and warm. Add the shredded cheese, salt and pepper. Heat until cheese melts. Once it melts, you can add more milk if you want it thinner. Also, if the soup is too thick you can eat it more as a dip.
We love eating apples and cinnamon anything with apples and cinnamon during the fall. There’s something very special about it during the fall. Likewise pumpkins are popular, but we would rather have apples! For some reason, the apples and cinnamon really have a place in our hearts. The smell of apples and cinnamon when they are in the oven baking reminds us of cool, crisp fall evenings. Hence why if you come to our home in the fall you will see we have apples and cinnamon candles burning as well.
We love to have a side of muffins with soup as they flavor as well as help make it more of a meal. Here is one of our favorite muffin recipes.
Apple Cinnamon Muffins
Ingredients
Muffins:
- 1 ½ cups all-purpose flour
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1 1/2 teaspoons ground cinnamon
- ½ teaspoon salt
- 1 egg
- ⅓ cup butter
- ⅓ cup milk
- 2 apples – peeled, cored and chopped
Topping:
- 1/4 cup white sugar
- 1/3 cup brown sugar
- ½ cup butter, cubed
- ⅓ cup all-purpose flour
- 2 teaspoons ground cinnamon
Directions

Preheat the oven to 400 degrees F Grease 6 large muffin cups or line with paper muffin liners.

For muffins: Stir together flour, sugars, baking powder, cinnamon, and salt in a large bowl. Mix in egg, butter, and milk. Fold in chopped apples.

Spoon batter into the prepared muffin cups, filling just below the rim.

For topping: Put sugars, butter, flour, and cinnamon into a small bowl; mash mixture with a fork and sprinkle over unbaked muffins.

Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes.
